Purple sea moss has a stronger flavor and is high in antioxidants called anthocyanins. Anthocyanins are colored water-soluble pigments belonging to the phenolic group. The pigments are in glycosylated forms. Anthocyanins are responsible for the colors, red, pink or purple that you find in sea moss, and blue that are in fruits and vegetables. Anthocyanins are believed to lower blood pressure, improve visual acuity, lower the risk of CVD.
